Recipe for Bison Chili

For a hearty and healthy chili the whole family will love, enjoy this award winning recipe from Inland’s Food Services Department. Inland won “Best Entrée” at this year’s Taste of Greater Waterville event. Maggie Black, Director, adapted the recipe to include lean bison burger instead of beef – reducing the calories and increasing the taste!

2 tbsp Canola oil
1 cup fresh chopped onions
1 ¼ cup fresh chopped green peppers
1 cup black beans
1 cup dark red canned kidney beans, drained
1 cup whole kernel corn, drained
14 ½ oz canned diced tomatoes (including liquid)
1 tbsp Cumin
1 tbsp Chili powder
1 ¼ lbs Bison burger

Directions: Saute onions & peppers until onions are translucent. Add bison, and cook until no longer pink. Add remaining ingredients and simmer until temperature is 160 degrees. Makes ten 1 cup servings.
